I've checked the result of the same account on an iPad.
It's working perfectly, all the folders are present.
The external (imap) accounts are also present, which is not the case on Android.

The Dev Team is currently working on this, but as usual when talking about device-level issues (looks like that different versions/clients on Android implement different folder hierarchy engines) I won't dare to give an ETA before internal testing is completed..

In my case, I've seen that both my iPad and my Samsung Galaxy SII running ICS 4.0.3 (Cyanogen beta mod) are running the same activesync level as shown on the ZxMobile zimlet.

not sure if it helps Marcet, but i actually solved my problem by:
- making a new subfolder on the zimbra web interface
- copying everything from the "defect" folder to the new one
- deleting the old folder
- renaming the new folder if desired
- going on with the next folder
Was a big mess and lasted for quite a long time. But finally all my folders show up on my Desire Z! ;-)
Btw: deleting the account, resetting the device, resetting the device in Zimbra and updating Zextras from 1.2.2 to 1.2.3 didn't succeed.

A little update on this:
There is an open bug on the ZeXtras Bugzilla with a nice analysis on some of the subfolders problem (thanks Marcet) Bug 32 – Missing mail folders and bad hierarchy
As written on the Release Notes for version 1.2.3 (Changelog - ZeXtras Suite Wiki), we are still working to improve the Subfolders and the Folder Hierarchy system on Android devices, as different versions of this OS use different FolderHierarchy engines, requiring a lot of additional testing for both stock and custom/branded email apps...
