XMPP access is enabled by default in ZeXtras Chat, so my suggestion is to check your network/firewall settings to make sure that the service is correctly bound to ports 5222 and 5223 of the server and that traffic is correctly routed/NATed to such ports.
You can enable ZeXtras Chat logging by running

zxsuite chat setProperty ZxChat_LogEnabled true
as the Zimbra user. All chat and system messages will be logged in /opt/zimbra/log/zxchat.log.
